Jean-Baptiste Bellefleur - Uimashkatai is a soup made from the caribou's stomach. One of its recognized medicinal properties is to help regain an appetite. Every day for a month, we stir the hermetically sealed stomach, as its contents, notably crushed lichen and blood, ferment. After a month, it becomes dry, thin and black. It has no smell, and is edible. All that's left, is to break off a small piece to make a broth, and begin to eat once again.
